On 21 July 1939 he opened the first Albertson's supermarket in Boise, Idaho, with Leonard Skaggs as his business partner. They opened their second and third stores the following year, and in their third year exceeded $1M in sales. Albertson's became one of America's leading grocery chains, and Albertson became one of his state's leading philanthropists. The grocery chain was known (at least while Albertson himself was alive) for excellent labor and community relations, and for a long-running advertising campaign that featured store employees singing, "It's Joe Albertson's supermarket, but the bakery (or meat, dairy, etc.) department is mine".
In 1966 Albertson and his wife established the J.A. and Kathryn Albertson Foundation, which has given more than $250M to education-related charities in Idaho. He was a very generous donor to his alma mater, the College of Idaho, which changed its name to Albertson College of Idaho from 1991-2007 in his honor, but has since restored its original name. The grocery chain peaked in 1999 with about 2,500 stores in 37 states, and now has about 1,200 stores in 16 states, owned by Supervalu and Cerberus Capital Management.
